strawberry mini muffins

These muffins are super easy to make and are perfect for the I-spent-too-much-time-playing-and-not-enough-time-getting-ready little one to eat on the way to the bus stop. Just keep a bag in the freezer and breakfast is ready in no time.

2 cups flour
1 1/2 cups uncooked old-fashion oats
3/4 cup sugar
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 cups milk
3/4 cup melted butter
2 eggs, beaten
1 1/2 teaspoons vanilla
2 cups chopped fresh strawberries

  1. Preheat oven to 400. Grease or paper-line muffin cups.
  2. Combine all dry ingredients in a large bowl. Combine milk, butter, eggs, and vanilla in a small bowl until blended; stir mixture into dry ingredients until moistened. Spoon evenly into prepared muffin cups, filling almost full.
  3. Bake 15-17 minutes or until toothpick inserted in centers comes out clean. Remove from pan and cool 10 minutes on wire racks. Serve warm or cool completely. Makes 18 muffins

    1. These look so pretty and delicious to! I don't have a cape cod (I love that style of house). We have a split level, that neither of us are crazy about, but the price was right and it is in a good school district. In 3 years our youngest will be in college and we will have more of a choice of where to live. Thanks for the recipe!
