broccoli salad

Want your kids to eat their veggies? Serve this slightly sweet broccoli salad with your next dinner.

I'm pretty lucky. . .my kids like broccoli! But I know lots of kids, and, ahem, some adults don't.

This raw broccoli salad could not be easier to make.

It's the perfect make ahead side dish.

INGREDIENTS
  • 1 1/2 to 2 lbs broccoli, trimmed
  • 10 strips cooked bacon, chopped
  • 1/2 red onion, chopped
  • 1 cup sunflower seeds
  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 1 tablespoon red wine vinegar
DIRECTIONS
  1. Combine the mayonnaise, the sugar and the vinegar.
  2. Toss with the broccoli, the bacon, the onion, and the seeds.
  3. Can be served right away, but better if chilled at least an hour.
Also, don't be afraid to play with the recipe, golden raisins could be a fun addition. That's my favorite part of cooking (verse baking). You can adjust the recipe to suit your own tastes and still have to a dish turn out great!

Cook's Tip:
Want to save yourself the trouble of wiping bacon grease off your cook top? Cook it in the oven! Set your bacon strips on a wire rack placed over a baking sheet. Bake in 350 degree oven for about 10 minutes, depending on desired crispiness.

It's a {little} healthier too! All the excess fat will drop through the wire rack onto the baking sheet.
